The courier has collected the parcel from the sender.
The sender has handed the parcel to the courier, either through a pickup at their address or by dropping it at a branch or drop-off point.
From here the courier, not the seller, is responsible for the parcel, and the tracking number starts getting regular updates.
Watch out for “Shipping Label Created” or “create bill to system”. Some couriers group these here, but they really mean the seller has printed a label — the parcel may not be with the courier yet.

Most parcels move on to “In transit” the same day or the next, once they reach a sorting centre.
Parcels often wait for the branch's truck to the sorting centre, which may only run once a day. The status can sit still for about a day before it changes to in transit.
Label created means the seller has a tracking number but the courier may not have the parcel yet. Picked up means the courier physically has it.
Cancelling or changing the address usually has to go through the sender. Recipients generally can't cancel directly with the courier.
The ETrackings API reports this stage as ON_PICKED_UP
